Kale is the New Broccoli

Ever since Dr. Oz talked about kale as a super food it has become a household and restaurant staple!  This super green is easy to grow and store, available year round, inexpensive, nutritious, and versatile.   It’s packed with vitamins K, A, and C.  Books have been written entirely about this vegetable.  One that went viral is “Fifty Shades of Kale.”  I would imagine just the title of the book peaked a lot of interest!

I know a few of my clients make kale smoothies daily.  They love them and believe they are receiving the benefits of increased energy. When they add avocado or sweet potato to the mix they get an energy boosting, inflammation reducing concoction that wakes up the taste buds, with a comfort food type of feel.

Whole Foods Kale Recipes

My favorite Whole Foods recipe is Kale, Carrot, and Avocado Salad. It doesn’t sound like much but really has a ton of flavor.

  • 1 bunch kale, stemmed and finely chopped
  • 2 cups grated carrots
  • 1/2 avocado, peeled and pitted
  • 1/4 cup thinly sliced red onion
  • 2 tablespoons lemon or lime juice
  • 2 tablespoons sesame seeds, toasted
  • 1/2 teaspoon reduced sodium soy sauce
Method:Toss all ingredients together in a large bowl. Use your hands or the back of a large spoon to thoroughly mash avocado into kale. Set aside at room temperature for 30 minutes before serving to allow kale to soften.

Per Serving:160 calories (60 from fat), 7g total fat, 0.5g saturated fat, 0mg cholesterol, 115mg sodium, 23g carbohydrate (6g dietary fiber, 3g sugar), 6g protein
